Signatory - Banff

At the festival in Ijmuiden in the master class line up I got treated to a lovely expression of the Banff distillery from the Signatory cask strength collection. In total 31 years old, distilled at 12/11/1975 and bottled at 04/10/2007. Matured in hogshead #3343, producing a total of 261 bottles, of which this one was bottle number 233, at a strength of 43%.

The nose is filled with notes of spicy Asian cake, creamy and soft. Very aromatic and lots of deep stark honey and flower notes. Between the nice fruit and honey notes I find fudge and notes of Rollo sweets. Red apples, pear juice and banana.

On the palate the notes from the nose come back very balanced and soft. The finish is medium to long in length. Soft, fruity, vanilla and honey... It keeps developing and showing more and more lovely sweet and soft notes. Scoring an 7,5 out of 10 for me. This one needs its time for sure, but is lovely.
